is there an actual guide/style guide I'm supposed to be using for writing and uploading fanfic
or should I just throw stuff at the wall and see what sticks kinda deal?

Write what you want!
However, it's generally considered polite to list, in tags/notes/summary (depending on where you're posting), any content that might be triggering or upsetting such as rape, character death, explicit underage, incest, etc.
Or note that you're purposely not warning for anything, which is generally noted as "Choose Not To Warn/CNTW" - your story could contain anything and folks are reading aware of that.
